These cookies are perfect for those who are looking for a vegan or egg-free option, but still want to enjoy the delicious taste of cookies. They are soft, chewy and have a delicious vanilla flavor. They are perfect for breakfast, lunch, dinner or as a snack. They are also great to give as gifts.
Making these cookies is so much fun too, it's a great recipe to make with kids, they will love to help you mix the dough and shape them. And the best part is that they're so easy to make, you don't need any fancy equipment or ingredients, just a mixing bowl and a baking sheet. Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp  baking powder
  • 1/4 tsp  baking soda
  • 1/4 tsp  salt
  • 1/2 cups unsalted butter, softened
  • 3/4 cups granulated suga
  • 1/4 cups unsweetened applesauce
  • 1 tsp  vanilla extract

Instructions
 

  • Preheat your oven to 350F and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  • In a separate bowl, beat the butter, sugar, applesauce, and vanilla extract together until well combined.
  • Add the wet ingredients to the dry ingredients and mix until a dough forms.
  • Use a cookie scoop or spoon to form the dough into 24 balls and place on the prepared baking sheet.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
