Strawberry Pillows

If you’re looking for a quick and easy Valentine’s cookie recipe, look no further! These strawberry pillows are super simple to make and absolutely delicious.

Ingredients:

  • 1 cup of butter
  • 8oz of cream cheese
  • 1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 3 cups of flour
  • 2/3 cup of strawberry preserves

Instructions:

  1. First, cream the butter, cheese, and sugar together into a light, fluffy mixture.
  2. Next, beat in the vanilla and then slowly add the flour and mix it in.
  3. Once you’ve got your dough, split it into four portions and shape each portion into a disk-like shape.
  4. Wrap your disks in plastic and put them into the refrigerator for a couple of hours to firm them up.
  5. Once the disks have cooled, bring them out of the oven and roll each one down to around 1/8 of an inch in thickness.
  6. Use cookie cutters to cut circular shapes and place them onto baking sheets.
  7. Add a teaspoon of preserves into the middle of each circle and then put another circle on top; press the edges down to seal it closed. Make sure to cut little slits on the top of each cookie for the air to escape.
  8. Repeat this for all the dough and then cook your cookies for around 10 minutes at 375 F.

Red Velvet Whoopie Pies

Ingredients:

  • 3/4 cup of butter
  • 1 cup of sugar
  • 2 eggs
  • 1/2 cup of sour cream
  • 1 tablespoon of red food coloring
  • 1 teaspoon of white vinegar
  • 1 teaspoon of vanilla extract
  • 2 cups of flour
  • 1/4 cup of baking cocoa
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of baking soda
  • 2 oz of melted chocolate

For the filling:

  • 8 oz of cream cheese
  • 1/2 cup of butter
  • 2 and 1/2 cups of confectioners’ sugar
  • 2 teaspoons of vanilla extract

Toppings:

  • White chocolate chips
  • Chopped pecans

Instructions:

  1. Preheat your oven to 375 F.
  2. In a big bowl, mix the butter and sugar together.
  3. Next, beat in the eggs, cream, food coloring, vinegar, and vanilla.
  4. In a separate bowl, mix the flour, baking powder and soda, salt, and cocoa.
  5. Mix the wet and dry mixtures together, and then stir in the cooled melted chocolate.
  6. Use tablespoons to drop little lumps of your dough onto some baking sheets, a couple of inches apart. Bake for about 10 minutes.
  7. In a new bowl, mix the cream cheese and butter for your filling. Then add the confectioners’ sugar and vanilla.
  8. Spread the filling onto half of your cookies, and put the other half on top.
  9. Melt your white chips and drizzle over the top. Sprinkle some chopped pecans to finish and store the cookies in the refrigerator.

Sweetheart Cookies

A guaranteed family favorite, these cookies are fruity, sweet, and simple to make with only five ingredients.
Ingredients:

  • 3/4 cup of butter
  • 1 egg yolk
  • 1/2 cup of sugar
  • 1 and 1/2 cups of flour
  • 2 tablespoons of fruit preserves (raspberry or strawberry flavors work best)

Instructions:

  1. Cream the butter and sugar in a bowl, before mixing in the egg yolk.
  2. Next, stir in the flour gradually and knead your dough by hand for a few minutes on a floured surface.
  3. Roll the dough into small balls, about one inch in diameter.

  1. Crush the wafers into crumbs and mix them with one cup of your shredded coconut.
