A Refreshing Cookie?

It’s that time of year when the heat coming from your oven coupled with sun outside can make your kitchen feel more like a sauna. So what can you do to appease your baking addiction and create something both delicious and refreshing at the same time? Pink Lemonade Cookies of course! So grab the ingredients on the list and get to work. You’ll have delicious, refreshing cookies in no time!

  • 1 cup butter, softened
  • 1 cup sugar
  • 1⁄2 cup powdered sweetened pink lemonade mix
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1⁄2 teaspoon lemon extract
  • 2 3⁄4 cups all-purpose flour
  • 1 teaspoon baking soda

Preheat your oven to 350 degrees. While that’s heating up, see if you can combine cream, butter, sugar, and pink lemonade mix in a large bowl without breaking a sweat. Mix until fluffy and then beat in the egg, vanilla, and lemon extract. Now walk over to the fridge and open the door so that the cold air wafts into your face. Don’t worry you’re almost there! Prepare the flour and baking soda mix and pour that into batter. Imagine glacial waterfalls, winter in Minnesota, or your bobsledding memories to get through the next steps. You can do this! Now, use your favorite JB Cookie Cutter to make awesome shapes and letters with the dough. Place your artistic creations two inches apart on a well greased cookie sheet and pop them in the oven for 10-12 minutes.

Though your kitchen may have surpassed the temperature of the center of the sun, you only have to wait a few minutes to enjoy these refreshing little treats.

    I was looking at this recipe and the instructions state preheat oven to 350. While thats heating up, see if you can combine cream, butter etc….in the list of ingredients there is NO cream listed…how much do i use?
